After a career in pharmacy, third-generation coffee producer Leon Christianakis; decided to move back to Tanzania to raise his family and fully embark on reviving the Acacia Hills Coffee Estate in collaboration with Mark Stell of Portland Coffee Roasters in Oregon.

The cherry sorting process begins in the field and continues at the washing station, where de-pulping is carried out in the evening. The coffee is then subjected to an open fermentation process for a period of 12 to 13 hours. During this time, the coffee is regularly checked to monitor the level of fermentation. Once the fermentation process is complete, the coffee is washed and graded to separate P1, P2, and floaters. The drying process, which typically takes 13 to 16 days depending on weather conditions, continues until the parchment reaches a moisture content of 12% on the beds.
